True to Churchill's taste for older vintages, the Cuvée Sir Winston Churchill is composed exclusively of grapes sourced from Grands Crus Pinot Noir and Chardonnay vineyards that were under vine during Churchill’s lifetime. Dominated by Pinot Noir, it offers structure and breadth, while Chardonnay adds a necessary counterbalance of elegance and finesse. This cuvée is only produced in the best vintages and released later than other vintage champagnes from Pol Roger, ensuring each bottle has benefited from prolonged aging in the ideal conditions of their deep, cool cellars.
 
Meticulous Vinification and Maturation
 
Following traditional methods, the must undergoes two débourbages (settlings), ensuring clarity and purity of the base wine. Fermentation is conducted slowly and at low temperatures to preserve delicate aromatics and promote complexity. Following a full malolactic fermentation to round out the acidity, the blend is matured in bottle in Pol Roger’s deep cellars—33 meters below street level—where it benefits from the famously cool and damp conditions, enhancing the development of its fine, persistent mousse.
