Barbadillo Pedro Ximénez is a luxurious sweet Sherry from the renowned D.O. Jerez-Xérès-Sherry region in southern Spain. Crafted from sun-dried Pedro Ximénez grapes, this deeply concentrated wine showcases the traditional winemaking heritage of Jerez and the exceptional richness that defines the PX style.
The grapes undergo the classic “asoleo” sun-drying process, where freshly harvested Pedro Ximénez grapes are laid out under the Andalusian sun until they become naturally concentrated raisins. This traditional technique intensifies the sugars and flavours before the grapes are pressed and fermented.
The wine is then fortified and matured for around five years in American oak barrels, following the historic Solera and Criaderas ageing system. This oxidative maturation gives the wine remarkable depth, complexity and the signature richness associated with great PX Sherry.
In the glass, it reveals a deep mahogany colour with opulent aromas of raisins, dried plums and dark chocolate, complemented by subtle notes of oak. The palate is velvety, syrupy and intensely rich, delivering layers of dried fruit sweetness balanced by gentle acidity. The finish is long and indulgent with lingering raisin and cocoa notes.
A decadent dessert wine that can also be enjoyed in small measures on its own, Barbadillo Pedro Ximénez is a true expression of traditional Sherry craftsmanship.
