From the southern entrance of Gevrey-Chambertin, Les Combottes 2021 by Domaine Georges Lignier & Fils is a beautifully structured Premier Cru that reflects the depth and finesse of this iconic Côte de Nuits terroir. The domaine’s 1.5-hectare parcel sits on south-facing slopes where gravelly soils over light limestone warm quickly, producing Pinot Noir with expressive fruit and natural concentration.
The grapes are hand-harvested and sorted at the domaine, with a proportion of whole bunches used to enhance aromatic complexity. Following a cold pre-fermentation maceration and fermentation with indigenous yeasts, the wine undergoes gentle extraction before being transferred to oak barrels (25% new), where it matures for 18 months. Bottled unfiltered, the wine retains its purity and texture.
In the glass, it shows a deep ruby hue and an intense bouquet of blackcurrant and red berry fruit, evolving with age toward subtle animal and musky nuances. The palate is powerful yet poised, balancing firm tannins with ripe, jammy fruit and lively acidity, leading to a long, structured finish.
