Produced entirely from Palomino grapes, this Amontillado originates from a Solera founded in 1914, where it has matured slowly through the traditional Criaderas and Solera ageing system. The style begins its life ageing biologically under flor like a Fino before continuing its maturation oxidatively, creating a wine that combines freshness with remarkable depth and complexity.
In the glass, the wine shows a bright amber colour with dark brown edges, reflecting its long ageing. The nose is intensely aromatic with notes of fine wood, hazelnuts, and subtle citrus peel. On the palate it is dry, powerful and velvety, delivering flavours of nutty richness, citrus zest, and crystallised fruits, leading to a long and persistent finish.
