Harveys Pedro Ximénez V.O.R.S. 30 Year Old Sherry is a truly remarkable fortified wine from the legendary Jerez-Xérès-Sherry region of southern Spain. Classified as V.O.R.S. (Very Old Rare Sherry) and certified by the Consejo Regulador, this extraordinary wine has matured for over 30 years in the traditional Criaderas and Solera ageing system, resulting in a wine of exceptional richness, depth, and complexity.

 

Produced exclusively from Pedro Ximénez grapes, this rare Sherry originates from a Solera founded in 1919. The grapes undergo traditional sun-drying before fermentation, concentrating their natural sugars and flavours. Over decades of oxidative ageing in oak casks, the wine develops its signature intensity and luxurious texture.

 

In the glass, it reveals a very dark mahogany colour, almost opaque. The nose is rich and enticing with aromas of raisins, liquorice and black treacle. On the palate it is intensely sweet, smooth, and velvety, delivering deep flavours of toasted raisins, dried fruits, and molasses, followed by a long, elegant, and lingering finish.
