Saison Sherry Cask Rum is a blend of rums from two Caribbean islands, Barbados and Trinidad, finished in France by Distillerie Tessendier & Fils. The finishing cask is Pedro Ximénez sherry, and the rum is bottled at 42% ABV.
 
The Tessendier name will be familiar to anyone who knows Cognac, and this is a rum that has been finished in France rather than in the Caribbean. The sherry finish is the main talking point, and the flavours fit it: dried fruit and dark chocolate rather than a light, grassy or spiced style.
 
The nose is candied orange peel, roasted nuts and hints of dark chocolate. The palate is full-bodied and velvety, with honey, raisins and prunes. The finish is long and spicy, with vanilla, dried fruit and oak.
