Uovo Nebbiolo Cabernet 2022 is a distinctive and expressive red wine crafted with a modern, minimal-intervention philosophy. Produced in Australia, this innovative blend combines the structure of Cabernet Sauvignon with the elegance and aromatic lift of Nebbiolo, creating a bold yet refined wine with depth and character.
The wine is fermented and matured in a unique clay-cement ovoid tank, often referred to as a giant "egg." This vessel naturally creates an internal vortex that keeps the lees gently circulating throughout the wine. This constant movement enhances texture, purity, and mouthfeel, resulting in a wine with remarkable balance and complexity.
Following a natural winemaking approach, no tannins, acids, or animal fining agents are added during production. Sulphur is not used during the winemaking process, with only a minimal amount added at bottling to stabilise the wine.
The result is a vibrant and full-bodied red wine showing blackcurrant fruit, bright acidity, and elegant structure, delivering a pure and expressive style that highlights the natural character of the grapes.
